Personally i like plain simple dials, why i own Panerais i suppose, so of your two . I have a 359 and the reason I prefer it over the others is that it has Arabic hour markers for the 12 hours round the dial (save no.3 where the date window occupies the place where the no.3 should appear). Different dials and different case finish. 312's dial has the "6, 9, 12" and has a brushed case. 359 has the arabic dial with a polished case. Same dimensions for the case, and both watches use the same movement.
I prefer 312 rather than 359 because of crystal clarity and reflection and because of lume. These 312/320/329 have indeed excellent lume. And this is not my best lume pic.

It has a polished case, whereas the 312, 321, 351, etc. all have brushed cases. The obvious difference is the 11-numeral dial whereas most PAM have 3 or 4 cardinal numerals with “sticks” marking 5, 10, etc.
